Hey peeps, just checking in to get your taste buds ‘started’. This morning I had a mucho tasty breakfast, Florentine Eggs. And what I love about this dish is that you can make a few of them in advance and refrigerate and have a ‘snack/meal’ ready in a jif! The recipe is below. I took the photo, spur of the moment, so not the best lighting in my dining room. But hey I bought some work lights and learning more about photography on my new camera! So yepper, I created a ‘photography’ category for those of you who are into that sort of thing, so that we can exchange tips etc, etc!
I don’t always get into ‘measurements’, I just eyeball when I’m feeling like a lush, or substitute/measure when I know I need to be good. Use your best judgement or surf online various low cal/healthier choices for this recipe!
You can definitely substitute egg product and low/non-fat cream cheese if you like. And don’t forget to check out my Tomato Pesto Toasties post! Hmmm good!
- Mix low/non-fat cream cheese with frozen or canned spinach, add nutmeg and salt/pepper
- Pour mixture into ramekin
- Create indent in center of mixture and add 1 cracked egg
- Sprinkle a thin blanket of shredded cheddar cheese [or your cheese of choice]
Bake for 20 minutes or until cheese is melted with a ‘light crust’ appearance.
Let cool & enjoy!
